Easy starts you with an extra amount of handgun bullets, and has a FAS in the box at the start.

Enemy HP, Damage and all other things are exactly the same.

It's also most likely slower, because you need to enter the box immediately, which you don't usually do, to free up the space those extra handgun bullets are now occupying.
