I recommend celeste as it has an in-game timer and if you get to chapter 9 it teaches you a couple strats that can be used in speedruning the base game

If you are looking for IL Runs. I would say go for any Racing Game that fits your needs. But, if you are looking for a Full Run, 100% I would try Tony Hawk or Mat Hoffman. Or, any of those games. They are good for 100%
