Wonderis, others and I were talking in the ETG Discord and have possibly made a new list on what counts as 100% and whats 101%:
What counts as 100% - Unlocking all NPC's Fixing all shortcuts Unlocking Finished gun and collecting it Completing the side quests Getting all character alt skins and alt gun skins Getting all Challenge trophies
What counts as 101% - Getting items/guns that don't count towards Finished Gun unlock Getting Gold Tonic Getting CoopCultist items/skins
BONUS - Get Cormorant
This could definitely work as a possible way to 100% ETG as a speedrun category but holy hell would it be hard to do

How come there isn't a category for Gungeon 100%? I made a sort of path to use for the 100% Gungeon run that someone out there could use, but if made there'd need to be new rules for it:
- You must stream, as the run would be long enough as is and can be cheated if recorded normally (EX: BOTW 100% speedruns).
- You are allowed 3 sleep breaks, each 9 hours long. You are allowed to pause the timer in these breaks to sleep. When your breaks are over the timer must remain on until you're finished with the run.
