I think that there should be a new category that is exhibition but with 2 players. Because playing with 2 players eliminates the threats of timeouts, which completely ruins the meta of the original category, I think that it should require a different category.

That sounds like great fun. Also, another thing I would like to see in the category is to allow one player to play with two controllers at the same time.
