The definitive edition includes all of the DLCs, so you should submit under 100%. I don't know if it's possible to disable them on PS4, but if it is you could potentially disable them and submit under the other category. IMO playing with DLC is more funthough since you can move faster by jump-rolling from the start.

It is not possible to disable them on console, so they will always all be active.
