No... having to complete all 128 portals would be a nightmare. Ignoring all of the eyes that break during triangulation, you would have to get over 1400 ender pearls to fill all of the portals, and as many blaze powder. Most portals are around 20,000 blocks from spawn, and walking all the way around the rings is hundreds of thousands of blocks. Basically, this category should be for pre1.9, and if it is being split, should be hardcore vs non-hardcore instead of split by version.
Start the real time as soon as you spawn, and the game time should automatically start as soon as you start the timer. There's a youtube tutorial on how to set up the in game timer.

You don't need to do /seed after the run, but you need to provide the seed, or else your run will be rejected.
Why shouldn't it be allowed? As long as it's free and available for all runners, it maintains a level playing field, and it doesn't lose any part of the "randomness."
The submitted runs with Optifine for 1.16 were submitted before Optifine was banned.
You need to have Optifine to zoom. Unfortunately, Optifine is banned from speedruns in 1.16+, so there's no way to use zoom in speedrunning. The zoom setting is also banned from all versions including ones where optifine is allowed.
Not sure if this would be that different from normal runs. The only real difference this would make is smelting iron instead of killing the golem, and narrowing 1.14 down to not being able to use savillages for wood. Pretty sure that there have been many World Records that have been vegetarian, due to the accessibility of bread in newer versions. Basically, I don't think people would run this, as it's only a slight hindrance to the normal path of a run, and doesn't offer many advantages or disadvantages to running this over the main category.

Not a mod, but I don't think so. The rules ban any texture packs that give you an unfair advantage, and low fire and highlighted ores definitely sound unfair to me.
If you have a 1.16 SSG run, add it to the 1.9-1.15 board, but put the version as 1.16.
I believe the current ssg seed is 1 of the 2^64 seeds, and is not one that is able to be randomly generated.
Depends what version you're in. They've changed nether fortress rarity in the new nether, so if you run 1.16 it is very rare to find a fortress. My preference is to check for open areas where you can see far away, in hopes that you will see a fortress somewhere out in the open. There are a couple other strategies that may or may not be better, but again, it's just preference. If you want a more in-depth explanation, I would ask on the discord.
