No, you can view your pending and rejected runs on your profile. They're on the "Pending" tab.
Also, you would get a notification if it's rejected or verified. (If you have these notification types turned on)
No, you shouldn't need those filled out. And the Splits.io and LRT are both optional - as you can tell by theere being no "*" next to it
The actual issue is that the rate limited thing was added as someone kept on spamming gore run submissions to random games. So it was added.
But it seems to be too aggressive or doesn't like new accounts very much. So just wait a bit or until tomorrow and it should be fixed.
Yeah, any game can be added to this site regardless of copyright. As I haven't heard of any major game developers compain about this.
And is Minecraft Trail already added as a game on the site?
If so, then of course you can speedrun it as it's already on it and that other people have.
If not, then were you asking this question to add the game to the site yourself?

Also an alternative to therun.gg, is that splits could be directly uploaded onto SRC.
And that a user could choose either or to upload to.
Although, this would mean that SRC needs to parse the file and follow the specification on it. And hopefully not break stuff lol

There used to be a support ticket type to request a new platforms. But since the site redesign, this has been removed. As apparently site staff can no longer directly add platforms to the site and need to ask the developers to edit the database directly lol
So I'd recommend for you to DM Meta on Discord and ask about it.
To request a platform:
You'd need to provide a long name, and short name.
I think you might also need to provide the date of the release date of it?
The short name is usually an abbreviation of the platform's full name. For example, PlayStation 4 to PS4
