There is a mod here: https://github.com/o7Moon/BarjiKart.Singleplayer It doesn't affect the game in anyway, just starts up without any other players.

That kinda sounds like taking all the hard parts away from speedrunning. Which in my opinion, are needed to fully speedrun the game.
