I'm crazy for suggesting this as a full-game category. Doesn't include any DLC courses, but would make for quite an interesting run.
It has come to my attention that balls being released from the locks are actually faster when resetting for new runs. In fact, the method for getting the ball on the right flipper from the far left lane is so consistent that it's faster to do this method than to plunge the ball normally. While it benefits by saving time, it also takes time to set up the locks properly.
I went ahead and decided to split the categories between those that use this method and those that do it the normal way.
Boosts give an unfair advantage over other platforms if they're used.

Would it be better to change the background too? Maybe something like one of the Pac-Man courses and default settings (like Spiral or Championship I)?

I created more or less the same thread over on the Pac-Man forum as well, and the mods added new categories for that game.

Ehh, I think invincibility would be best in this case. If you're headed straight for a ghost, apart from jumping, you're basically screwed (since you can't turn around). Camera's also wonky in this mode, so it's not easy to tell where a ghost is.

Knowing the locations of all ghosts can be surprising or scary, so I'm suggesting that Invincibility be also activated if this category is ever run. Could avoid a LOT of surprise deaths.

Highway II 2,000,000 only is possible, but Championship III does not fit in any categories. The highest legitimate score on CIII is 1.8 million. Consider replacing CIII with CI for Short Time Trials.
It is currently impossible to reset progress, in-game, on Adventure Mode without deleting the actual save files.
Xbox One and PS4 users are in this sketchy situation where Adventure Mode is locked until a requirement is met in Score Attack (in turn, must also be unlocked by the Tutorial). And no one wants that. Those platforms may be unreliable for runs until Bandai Namco provides a solution, unless you are willing to give an hour to unlock Adventure Mode for another go at Any% or 228.
EDIT: I have looked at the save file, and while you do have to redo the tutorial, you'll need D's in courses you need to unlock Adventure Mode. Theoretically, if you fail (lose all lives) with a D, you'll still unlock new courses and, eventually, Adventure. It could help slash recovery times even further.
Switch players have it easy on the other hand. Have a 2nd profile ready for runs. Adventure Mode is already unlocked for you, so just be cautious on which saves you're deleting (personal vs speedrun) before doing an attempt.
Regardless, for all consoles, have a separate save or profile for speedrunning, just in case. Not sure how it works on XB1 or PS4, but it's the only alternative I can think of if you want your scores intact. Back up your normal save as well, if you don't want your high scores lost.

Well, why not make subcategories for the Full Tilt version and the 3D Pinball version? Same table and layout, different rules.

@loz, that is what is considered a Perfect Game. Eat all the ghosts, all the fruits, all Pac-Dots, and all the hidden dots in the kill screen with every single life.
