To my understanding, with current rules, the runs start as soon as you gain control of the monkey, so that would be as soon as you get in game (unless you can open the menu as soon as the game starts kinda like what SlowCooker did, I think). I personally like the idea of the run starting at something like the player moving from the starting position or actually at the difficulty selection as f1 suggested, but that's just my opinion.
