There are a lot of intricacies with OBS Studio, and you have to play around with them to get a good quality, yet good framerate, recording.
If you have a Nvidia card, make sure to select "Hardware (NVENC)" for your encoder, if it's not already. That'll make a huge difference!
Me too i use OBS, and I think the problem is that your "Max Bitrate" in settings is a bit too low (for the quality) or too high (great quality but low fps). I've had that happened many times, and try recording and testing and change every time the bitrate lower or higher for better quality and better fps.
If you still have a problem with the settings or the general OBS app, then check this tutorial: Long but worth it!
the newest version of OBS comes with a setup wizard, so try redownloading it and trying it :)
