The original Pikmin 3 speedrun leaderboard had both single player and co-op leaderboards for each mission, but I see that Pikmin 3 Deluxe has only single player leaderboards. Is this category going to be added or has it been decided against?

sorry. I don't know, but Pikmin 3 Deluxe has a two-player mode.
