I’m working on glitchless runs and want to know if this counts to ‘skipping the showers dialogue in prison chapter’

As long as you trigger the conversation it is not considered a glitch. Technically, you could trigger the conversation, climb out of the window and dodge them but that's slower then the method shown in the video.
