Wow that's literally the same as 1.16.5 and it's a very boring category. It would be much more reset heavy and RNG dependent due to piglin brutes and bad enderpearl chance.

When will people realize that the mods won’t just add a sub category for no reason, they were even hesitant to make the 1.16 category when it first came out. You can speedrun 1.17 if you want, but I highly doubt the mods will ever make it it’s own sub category.

1.17 doesnt add anything big for speedruning that 1.16.2 didnt add already so if 1.16.2 isnt a new category this wont be either
