I would like to know what rules are for video recording I know you can screen record or stream on twitch but I would like to know if I can record the speedrun with a camera or my phone.

It's down to the game you're running. Some games don't allow recordings with cameras and have to be a screen recording, but others don't really care. It's best to do a screen recording where possible. Check the game rules on video recordings before submitting
