V1, V2, or OLED should all be fine. The latter two are better overall, but certain serial ranges of V1 can be more easily hacked.

I wouldn't get the OLED, it's just more expensive for not a lot of benefit (especially when docked). As pear mentioned, the only benefit to buying a specific model is if you buy one of the launch ones which is hackable which allows for mods and whatnot.

Also for a capture card, most of the ones you'd want for switch are HDMI capture where you dock the switch, plug the HDMI cable into ur cap card, and then a second one from the cap card to a monitor/TV.
