First we need to gain access to the Steam Console.
To do so, press the Windows Key + R. A window should pop up. Type in "steam://open/console" and hit enter.
If Steam is already running, the Console should appear. Otherwise you will have to log-in first.
At the bottom of the console you can enter commands.
To download a previous version, we use the "download_depot" command followed by the app, depot & manifest ID. You can look up specific details on this page here .
Some relevant examples:

So, to download 1.0.6, we do download_depot 1369630 1369631 2363071559785156567
Patch 1.0.3 would be download_depot 1369630 1369631 4447225043679556471
etc.
Wait for the files to download (it's a bit over 1GB so it may take a while). You should find the files under "Steam\steamapps\content\app_1369630\depot_1369631".
