Seeing as there is no in-game settings menu, you need to find and edit the following file: 

C:\Users\<you>\AppData\Local\DinoGenesis\Saved\Config\Windows\GameUserSettings.ini

I've attached the config that I am using, which makes the game windowed, capped at 60 FPS, and reduces some of the quality settings. Please feel free to play with this as you see fit - just make a note if you find anything which dramatically affects gameplay.
