In this guide I will share my notes for the 100 % category. A lot of time and effort went into making this, in total I'd estimate around 30 to 40 hours of routing and testing. Since there are quite a few things to consider for this run, the routing isn't as obvious as for the Main Missions category. But in the end it worked out and I ended up with this pretty solid route.
Requirements
To beat the 100 % category you have to complete all of the main missions as well as all of the side missions and collect all 60 collectibles. In order to unlock all side missions it is necessary to collect 40 of the 60 collectibles scattered around the map. Each ten trophies you collect unlock a new horse to ride on and one of the side missions requires Nora who will unlock after collecting 40 trophies.
Paddocks and RNG
In total, there are 12 paddocks ("Koppel" in German) in the game, each with its own race to beat. During the main missions you are going to beat two of those paddocks: the Martinshof-Koppel and the Mühlen-Koppel (not to ne confused with the Mühlenhof-Koppel). This means there are ten other paddock races that have to be completed to finish a run. Two of the side missions require you to beat a specific paddock with a specific horse. Those horses are Cleopatra, who unlocks after beating the Zurück zum Schloss mission, and Nora, who unlocks after collecting 40 trophies. The paddocks you have to ride on with Nora and Cleopatra are random each time. Sadly, this can also include the two main mission paddocks which means if you are unlucky, you have to beat a paddock multiple times. However, if the RNG is gracious, those two side missions have to be completed on one of the ten remaining paddocks which also beats the regular "Beat the race" mission for that paddock. All of this is the reason the paddocks are done at the end of the run and not inbetween so you reduce your chances of having to do certain paddocks multiple times.
Route Difference between 100 % and All Missions
The only difference between the two categories is the number of trophies you need to collect. In 100 % you gather all of the 60 collectibles while you only need 40 of them to beat All Missions. You can use this route to run All Missions, just leave out the 20 trophies you find most inconvenient to collect.
Speedrun Route
Since I'm playing the game in German I will not translate the titles of the missions here. I guess it's helpful to know that "Koppel" means "paddock", other than that you will hopefully know which mission I'm talking about, if not, please watch my current PB for this category. I will not include taking photos and doing magic in this route because it's obvious when you have to do that while playing the game. If something is written in bold it means you have to do that during the mission you are currently on. Good luck and hex-hex!

- Activate the Question Mark near the beaver dam.
- Collect the flower south of the campsite.
- Collect trophy 47 south of the campsite.
- Collect the two flowers near the Martin's farm.
- Head north-west and colect trophy 48 east of the duck pond.
- Collect trophy 49 south-west of the duck pond.
- Collect the flower near the photo marker.
- Beat the mission Der Ententeich.
- Collect trophy 50 south-west of the castle. (Unlocks Pascal)
- Head south and collect trophy 51.
- Head east and activate the Question Mark.
- Collect trophy 52 at the Mühlenhof.
- Collect the flower at the Mühlenhof.
- Beat the mission Katzenjammer.
- Go to the Rekorde menu and select the mission Das vermisste Pferd to teleport to the castle. Lose the mission on purpose.
- Collect trophy 53 east of the castle.
- Collect trophy 54 east of the last trophy.
- Head south and collect trophy 55 near the Question Mark.
- Activate the Question Mark.
- Collect trophy 56 near the mission marker.
- Beat the mission Der verlorene Rucksack.
- Collect trophy 57 left of checkpoint 2.
- Go to the Rekorde menu and select the mission Martinshof-Koppel to teleport to the Martin's farm. Lose the mission on purpose.
- Clean the horse.
- Beat the mission Die Herausforderung.
- Decorate the horse.
- Check the Missions menu to see whiche paddock you need to ride on with Cleopatra.
- Switch to Cleopatra.
- Beat the mission Apfelkuchen für den Grafen.
- Finish the Blumen für das Schloss mission. (Attention! Do not activate the marker before reading the text message from Miss Martin, otherwise the game can softlock and reset parts of your progress.)
- Finish the remaining paddock races. This will require you to go back to the Martin's Farm at some point to switch to Nora to beat her side mission.
- Collect trophy 59 south of the Eichen-Koppel.
- Collect trophy 60 south of the Sonnenblumen-Koppel.
You can use the following missions to teleport near these paddocks:
- Holger will's wissen: Birken-Koppel
- Martinshof-Koppel: Löwenzahn-Koppel, Eichen-Koppel, Sonnenblumen-Koppel
- Tina und Alex: Mühlenhof-Koppel, Klee-Koppel, Mohn-Koppel
If you need to do the Mühlen-Koppel race again with Cleopatra or Nora, just select the race from the Rekorde menu.
Verification
Once you have beaten the last paddock or collected the last trophy it's GG! Make sure to open the menu and show the Missions screen to confirm you have done everything required and ensure your run is valid.
