You may select the level map from either Speedster or Quick Action when speedrunning: Race Circuit Any%, Eliminator Any%, Head-to-Head Any%, and Stadium Racing Any%. It does not make a difference if you choose a level map from one section of the game to another.

Some of the maps from the DS are either renamed or not included. If I were to speedrun, let's say, Detroit from Stadium Racing, what do I do?

I did not realize that; however, I would recommend the Wii if you are seriously considering speedrunning this game.
