To do a 7 players speedrun can we do a coop on a new realm (so everyone can join with no problems ) ? I posted a thread the category extension but I'll ask here too: Is there any specific problem that makes me unable to join my friend's world and viceversa? Thanks

The max player count in co-op speedrunning is 5, so the run is not valid no matter what.

There is no such thing as max player being 5

there's a ton of runs with over 5 people in it so idk where u got this info. also you can make a world and have 8 people join at once so i dont think you need a realm
