That should be a thing and someone has done it (Scientific Guy)

Darker Side Level%
Beat Darker Side as fast as you can (without frog glitch)
Don't be confused with Darker Side Speedrun I'm talking about once you get into the pipe thats when it starts.
Checkpointless%: Complete the game with no checkpoints
Dram Stratless: No Desert Dram Strat or Metro Dram (First Moon) and no Snow Dram
First Story Moon%: Get the first moon as fast as you can.
First Multi Moon: Get the first multi moon as fast as you can.
First Regular Moon: Get the first Regular Moon as fast as you can.
Blindfold% (Idk why but sure)
Demo% (Sand Kingdom): You've to get the first story moon (On Top of the Highest Tower) then the 5 Moon Shard ones then after that defeat Harriet the Broodal and then you're done.
Demo% (Metro Kingdom): Start your timer as soon as you get the multi moon from mecha wiggler and start the timer at the cutscene where it says (A Fresh Start for the City) After getting 5 Power Moons in total that's when you finish the Metro Demo%.
Bound Bowl Real Time Attack: (Win both of the Bound Bowl Grand Prixes in Snow Kingdom as fast as you can)
Face & Walk%: Get a score of 100 in Koopa Trace Walking on Sand Kingdom, Snow Kingdom and Moon Kingdom and Do the Goomba Face Game in Cloud Kingdom and Mario in Mushroom Kingdom as fast as you can (You've to get them in order and if you dont get 100 on your first attempt you have to keep trying until you get it or reset your run).
Face & Walk% K Sand K Snow K Moon F Goomba F Mario
Festival Level%: Complete the Festival Level as Fast as you can (Get both Power Moons or you fail).
Cap Door%: Get Every Moon from All Cap Doors.
Moon Pipe%: Get every Moon From the Moon Pipes
Stickers%: Get Every Sticker from Every Kingdom
Toys%: Get all the toys from every shop in Super Mario Odyssey
Souvenir%: Get All The Souvenirs from All Shops in EVERY Kingdom
Costume%: Get Every Single Costume in Super Mario Odyssey as fast as you can (There will be 2 different sections)
(1.0.0 Players Can get everything apart from DLC)
(1.2.0 Have to wait until ALL OF The DLC Costumes come out)
8Bit%: Get Every 8Bit Moon as fast as you can
8BitCharacter%: (Find All Cat Mario and Cat Peach and Rosalinas in SMO) <-- Version 1.0.0
8BitCharacter%: (1.2.0) Find All Cat Mario, Cat Peach, Rosalina and Luigis in SMO) - (You've to wait until all of the hint art luigi's have finished so this won't be up until then).
