NOTE: Early in the video I said I was going to explain why turning off random encounters is necessary for this skip but I never actually explain why. Here's the explanation: Turning random encounters off is essential once you get back into the buggy after getting off the Chocobo. If you were to get into a random encounter on the way to Cosmo Canyon, the Chocobo will run away and the game will no longer think you are "on" a Chocobo which makes the skip impossible.
