I wonder if it’s possible to run the game in any % on console ? Because I only saw run on PC

Any% includes crouch clipping (with or without FPS modulation), which is not possible on console. The run(s) you are perhaps looking for already exist under the non-any% categories, such as https://www.speedrun.com/ai/full_game#Console

Just out of interest, why is crouch clipping not possible on console? Is the console version made differently?
