Normally moderators of games do allow you to record with your phone to TV, just make sure that everything is clear.

A way to record without that is with a capture device that accepts composite cables

Ummmm Minecraft literally has an end goal? Have you even looked at Minecraft's leaderboard? You need to defeat the Ender Dragon in a place called The End.

Anyway, judging if your game should be accepted or not based on games which are already on the site is not accurate. This is because game request requirements have changed overtime.

Also if site staff delete Minecraft from the site, then people would be outraged. This is one of the most popular games to speedrun.

like: die fastest, find a car in custom modes (players don't customize), go to a city, a town or go to all towns and cities, get a certain item the fastest,...

These all seem like arbitrary goals. And if your game doesn't have an end, then it can't be accepted lol.
