European UnionBizhawk with bsnes core has less input lag but it's more demanding on your computer so it can get pretty laggy if you record + play on bizhawk. If your computer can handle it though I definitely recommend it! It will fall under regular snes with emu. VC implies it's run on an official nintendo emulator like wii/switch/snes mini which all have improved loading times compared to the snes.
The closest thing would be the level maps on http://www.dkc-atlas.com/maps/ that show the level layouts with bananas.
There's no feasible way to track if you've collected every banana though and would be a nightmare to moderate so it'd never be a speedrun category.
There are no banned "minor" glitches that's why the category is called "no major glitches" and has the major glitches listed in the rules, anything not listed is fair game.
From what you've listed you could either submit it under all stages or no major glitches, whatever you fancy.
If it's still confusing you can always watch the world record run.

Mods can't actually delete runs, we only have an edit and reject option. If you can't delete the run in a few days just reply in this thread and I'll reject it
Sounds like you could just require the runner to show the settings menu after they PB ? Weird to ban an emulator other games accept just because of that.
