The obvious categories are Any% and 100%.
Any% is easily defined as "start the raft cutscene".
100% is a bit trickier since you can explore and unlock stuff after the raft cutscene and there's a lot of hidden content. My suggestion is to define it as "Fill out the inventory, costume hut and extras menu and finish with the raft cutscene". This is quite a bit clumsier worded than "open every chest" but since there's a dummy chest and most of the last chests will only have yellow hearts in them they would feel quite arbitrary to collection rate. There is an argument for open every chest though in that this wording would make it so you have to access most of the content but I personally think that seems arbitrary. I'd love some input.
More arbitrary categories could include low%, reverse dungeon order, whatever%. The game is so open that you can run it however you want really. Bingo would probably be amazing if well balanced.
