What you did was fine. You should not have died from that. My guess is that on the frame you hit the crystal, the dragon destroyed the wood block, removing your defenses. That's the only explanation I can think of, as you did everything else correct.
If you set the the game in Livesplit to Minecraft Dungeons, there should be an option if to activate the Auto Splitter.
Right click on livesplit ---> Edit splits

No, because as soon as you start moving the timer starts.
You are allowed to have optifine installed, but you can not use the zoom in feature. The only reason you would have it would be to reduce loadtimes/fps. You are not allowed to USE the actual mod.
Although I like the idea, there are a few problems with it.

The community. You would probably have maybe 1 or 2 people on a day AT MOST. Almost no one is running anything to do with MC anymore. Not the biggest issue, but with all the work to set it up, it would be near not worth it.

Lag issues. The good thing about single player is that you don't have to worry about server lag. When you play online, you could be wasting some time due to lag.

Correct me if I am wrong, but adding an in-game timer has nothing to do with TAS. TAS is when you add 'mods' or 'helping stones' into the game to help you complete the game faster. It has nothing to do with the timer. Again, adding an in-game timer into the server could be different than the actual time due to server lag.
I like the idea, except in the current state of MC speedruns, it would almost be dead.

It seems to have changed to timing starts on taking control of character in 1-1, instead of timing starting when starting the cutscene to 1-1. A good change if you ask me.
Thats because you did not put any in-game time. It is a run where glitches are allowed, and therefore goes by in-game time. If there is no in-game time, it goes to the bottom of the list.

Although I am not a mod here, and honestly my opinion might sound rather noobish, but what I would do is do a run first, and submit it. If he accepts it (last time the mod was on was 1 week ago) see how it shows up. Then once we see how it shows up, then he changes the layout to make it a bit easier/better.

You have to finish ever level in every chapter. All 36 levels have to be done from start to finish.
What more do you wan to do? Do you want to add the splits? Really all you need to do is just get the seed, start up the world, start the timer, and go. You can look up a tutorial on how to add splits/edit the timer/layout, but as long as you have livesplit, that's all you need to run ssg. (That and record it).
That depends on the type of game. Some mods will allow a picture to be enough proof, while others require video proof from EVERYONE. If you want a video to see how they got that world record, and they don't have one, and it is allowed to NOT have one, then the best thing to do would be to message that person and ask them what they did.
Sometimes what I find fixes it, is if you follow obi. Let me see if I can explain. Obi jumps over the pit right, and after that you can't follow him anymore? Go right up to the edge of that pit, and two stormtroppers will attack you. If you kill the two stormtroppers, proceed as normal. Sometimes I find that that fixes it, and obi will come out right after you kill all the troopers on the ledge.
I would be interested in this, although the only star wars games I can run is battlefront 1 and 2, or lego star wars the complete saga. (any% or any%NG+). I don't know how many runners you would be able to get, but the chances of everyone being able to do the same game at the same time is going to be impossible I think.
