When does the run end? At the credits or after the EnderDragon dies?

Hello new runner here. I have an Elgato HD60 pro and plan to speedrun Minecraft for the Nintendo Switch. How do I get a timer and how do I get the timestamps to the left of when I got to certain places? Thanks!
