Hey, there's nothing in the rules about which emulators are allowed and which are not. Is there a list somewhere of accurate emulators?

For now, refer to the Land of Illusion emulator list. I'll copy those rules /recommendations over here at some point.

It's almost a certainty that existing runs will be grandfathered in, unless there's something specific that's found to be grossly inaccurate.
