I found out that I could pause after grabbing a shine while in the air. I've never seen this before, so I'm assuming it's insignificant. Also, the shine doesn't actually count until you touch the ground and the text appears, so I'm pretty sure this is useless.

You are correct. Although it is useful because it means you can reload the level on practice codes before the shine grab cutscene starts if you accidentally grab it.
