What are some consistent ways of using Cappy's homing moves? Is it only joycons that can use it or can pro controller do it as well? I couldn't find any videos on it so hopefully someone can help me.

You can shake with whatever you are using. Joycons is better I think but pro controller works also. I recommend just practicing shaking for homing throws to get things and you will get better at it.
