I assume you're talking about console. To run a category longer than an hour your two options are to use a capture card, or stream the run and highlight it.

you need a video of your WHOLE run. Unfortunately you are gonna have to buy a capture card like everyone else. cheap HDMI capture cards are available for $50. i recommend the avermedia LGP lite when starting out. Or you could stream it and then highlight it after

I also run Any% Classic on Xbox One, the way I record is using the Twitch app on the Xbox One console to stream the run, and then afterwards logging on to my Twitch account on my laptop and make a highlight of the run. It's super straight forward and doesn't cost anything either so I would definitely recommend doing it this way. As long as your internet is ok you shouldn't have any issues with this method.
