Here is the detail of how health and poison works, and how much Health points (HP) healing items give you back. Every 25%, your Status ("Fine", "Danger", etc.) changes; below are the literal values for each character.

Poison is a status that prevents you from seeing your health, and that removes HP every so often. It is cured through the use of a blue herb. The game usually removes 1 HP from your current health every ~30 frames or so, which means that, if you have full health with Jill, and as the game runs at 30 frames per second, it will take around 16 minutes to die from it. Note that poison isn't ticking if the game is in a pause mode (during cutscene, inventory, map, loadings, etc.).

Healing items :

Green Herb : heals 25% of your health. Green Herb x2 : heals 80% of your health. If this formula is true when you heal, it will only heal 60%.

[current_HP + 80%_max_HP > 100%_max_HP] Example : Chris has 322 HP (23% total). He uses a Mixed Herb (G+G) : 23% + 80% = 103%. As his health can't be above 100%, the game gives him 60% instead, which will bring him to 83% total (1162 HP).

Green Herb + Red Herb or Green Herb x3 : heals 100% of your health.
