To help moderators and Runners we decided to make this spreadsheet listing how many Coins and Gems there are in each level:

The only exception is level 40 that has a boss giving you 15 coins every time you bump in their head, so you have to collect every coin and the boss is optional.

Also we suggest to not cut the final screen of the level, we use to verify how many items you collect and it helps a lot.
