How can I know if I have a D70 or CF0 when jumping from the top of the stairs?

You'll see/feel when you get sockfolder. It's easy to get used to.

The Sockfolder value displayed in the practice rom/Sockfolder hack is a computed value based on Mario's x and y positions. It's not actually stored in memory anywhere in the vanilla game, so you won't be able to find it using RAM Watch or any other kind of memory viewer.

What's stopping you from using the practice ROM?
