OBS and XSplit are the most common used programs for streaming to Twitch and other platforms. They also have the ability to locally record instead of streaming which will just save the video on your computer and then you can do whatever you need/want to do with it.

Bandicam is good for 8, 16, and 32 bit emulation. Anything heavier than that, try Fraps

I would recommend OBS. As Timmiluvs pointed out, its a streaming program but can record locally. It allows you to create a scene (just like streamers do) so you can record the game + timer + Overlay (if you want).

I would definitely recommend OBS for both streaming and recording. It doesn't lag for me at all and I couldn't say that about XSplit when I used it. But just try out both and maybe others and see what you like best.
