Original famicom from 1983, I changed now the Addapter and now the picture is way too bright

I know on my N64 using splitters to split the signal to a CRT and OBS makes it a but darker. Not sure if that helps but it's an idea

I always split my video signal on every console cuz the capture card delay is too big, so I can say that it's not OBS that makes it dark

It's on my monitor too. Could it be the AV mod's fault? Should've probably told about the mod earlier

What are you using to split the video between the monitor and the capture card? If you're using an unpowered splitter (meaning it's not some device that gets power from an electrical outlet) that very well may be your problem.

No, the splitter that I use is powered, when I bought it I specifically searched for a powered splitter to avoid delay
