Create Game, Window or Display Capture -> if window or display capture, add a "crop" filter on it (right click -> filters...) and crop it down to the area you want to show. (game capture shouldn't have that issue, but is limited to games(duh))

I personally prefer xsplit. Pretty simple to use though you need another apps to edit the video
You can use Xsplit , but obs is a way mutch better. You also can use software like aktion or fraps , but obs is the best to record and stream
Fraps looks awful IMHO and Bandicam has their name at the top. Xsplit requires an account and I have never heard of aktion. OBS is by far the best free program to use, but I suppose it ultimately comes down to personal preference.
Turning the mic volume to zero will effectively mute any microphone that may be active. So, to answer your question, you are safe like you've already done.
Fraps records good but it saves the video with a lot of bytes. Like --> 1 minute = 1 GB. This makes the uploading time long as hell! I stopped using it after my Armed with Wings 2 runs. So just use OBS.

Overwolf is great for recording games (if your game isn't supported just use windowed mode and capture desktop). It also has other apps one can use in-game.
