You fight all the over world Mini Bosses, all the Test of strength Guardians, All of the Divine Beast Ganons, and Calamity ganon at the end. Any thing that has a time and a long red line of health, so No Lynels or Yiga Clan enemies. Just a thought

couldn't you just do all stal enemies what I mean by that is just to defeat at least 1 stal enemies of each type like staloblin stalmoblin stalizalfos stalnox and more that I might've missed
