How does that work? I have a iPhone 6. I can record gameplay from a Nintendo game but it wouldn’t really matter unless I had a timer or something to prove my run. How would I get a timer for it so everyone knows how long it took? Is there something everyone uses?

Why do you say it won’t count unless you had a timer? Unless the rules explicitly ask for a timer, there’s no requirement for one.

The most commonly used one is LiveSplit, but there are a few alternatives like WSplit too.

I just meant if I don’t actually show the count how would it matter? How would you know? I guess xsplit would do that. I found speed run assistant for iPhone and frame perfect speed run so there’s two possiblitys.

You can use a timer to time your run, but it's not required to show (unless stated otherwise) is what I meant. A timer is a nice tool to have since it can keep pretty good track of your time and it's nice for viewers to know your pace, but it has no bearing on the run itself or it's validity (it might boost it though).
