My friend and I were interested in running some of these categories together, however there appears to be no way for us to upload times under Co-op. Is there a way we can have it so we can work together and both post a co-op time?

yes, just play co-op normally on a map. as soon as map starts time starts. you both must make sure to start round quick as these should be included in time .
