Me and my friend are each going to attempt an any% OoT run soon. We aim to stream and record it using twitch.

We have never really tried speedrunning something before, so we were wondering if there anything we should know about uploading it here before we try? For example, do we need to know our times for individual levels, or is the overall time enough? The timer is started as soon as we press start, yes? Is there anything we could accidentally do in the game that would invalidate our run?

You don't need to know your IL/segment times, the overall is good enough. You can check the rules of each category pressing the "View rules" button, just above the first place. The same applies for the timer rules: "Timing starts when selecting "Yes" on the file select screen".

IL times are separate from runs.

In ILs you are allowed to do setup before you enter the dungeon. So for example you could chus or bombs to make beating deku tree faster.

Recently, many longer runs submitted as Twitch highlights have had parts of their audio muted due to Twitch's automatic copyright detection, the most frequent case being long sections of Lost Woods music.
