As a community we can come up with a better way to define 100% that does not involve Monster Manual. Such as: All Roda Fruit, All Armor, All Accessories, All Panaceas, Obtaining Burst, and Defeat All Bosses. This 100% has been done before by myself. Getting to Max level requires too much grinding, for any category (even Very Easy and that's boring).

The main reason, I don't think 100% would be worth it unless you're attempting a Nightmare Run, is because the bosses become too easy with all the armor + burst. Even in Hard Mode. I've done Any% Hard Mode with Yunica and can say doing it in Easy is simply the better speedrun.

If anyone is still interesting in doing a 100% Category, by all means! Let's have a discussion :) Ys Origin Speedrunning has a discord available for all who are interested in speedrunning YsO in general!

technically 100% has no inherent definition on any game that doesn't itself have an in-game percentage counter. your thinking is closer to "all permanent flags", which is not exactly the same thing as 100% in many cases (banjo runs as the first example i can think of).

Source: Seen hundreds of arguments over 100% definitions in games that have no % counter because level 99 and all items/99 of all items are stupid requirements for speedruns that don't specifically track them in any way.

I'm very new to the speedrun scene, as far as actually running anything, so I'm certainly not an expert on category definitions, but I was just thinking that the Final Fantasy VI 100% is defined specifically for that game and means getting all 14 characters and 26 espers. In Chrono Trigger it's completing all side quests given by the Guru of Time and beating the game. They don't require gathering every item or maxing anything else out, so why couldn't you define 100% for this game as all collectibles and bosses?

Not that I'm opposed to defining everything that's being accomplished.

Well where do you define all collectibles? There are multiples of Celcetan Panaceas and if you start saying all chests, many just have SP in them.

The problem with 100% regarding its arbitrariness is "At what point does adding more things to a 100% category stop giving it any additional meaning as a run?" Honestly, all chests sounds silly for that reason. I think something more like "All Bosses All Roos All Equipment" would be better since most of the items are just stuff you find here and there and there's no real meaningful change to grabbing the celcetan panacea or the keys to doors you don't need to open, especially when some of them would be faster to clip through even if you had the key (on Toal).

Very true, I was thinking about that myself, that if you were to do a run like that on Toal, a lot of the stuff would just be collected for the sake of collecting, as it might not be worth the menu time on an RTA to equip every piece you collect, and skipping the door animations on the large doors would most certainly be faster than using the medallions. On Yunica or as the OP was thinking, Hugo, it would make more sense.
