Can someone please list everything I need to unlock for 100% speedrun, I've heard people say you gotta get 3 stars and some say you don't, just confused

Definitely don’t need 3 stars. Just get a star on every cup in every CC and unlock all the fast staff ghosts on a new file.

Unlock Everything is what the category is, complete 100% requiring 3 stars would be a meme I'm not sure I want to try. Also, you can look in the other 3 100%/Unlock Everything threads before this one to get an understanding of what you need and how the run is.

You need to unlock All characters, All Vehicles, All Expert Staff Ghosts, and Mirror Mode in any order you desire in the fastest time possible on a blank save file. I'd start by doing 4 short tracks (Luigi Circuit, Moo Moo Meadows, GCN Peach Beach, DS Yoshi Falls, SNES Ghost Valley 2) and unlocking the Expert Staff Ghosts on 4 of those tracks to get Funky Kong, and then you just need at least 1 star on each cup in each grand prix mode, and then finishing up time trials by unlocking all the expert staff ghosts. 3 Stars on each cup would be absurd, as it could extend runs up to 3+ more hours if that were the case.

To get a good idea of what strats to use, I'd take a look at either mine, Estaloy's, or Insane's run to get a good idea of what you need to do.

I am assuming that you can also do ultra shortcuts on certain courses such as Coconut Mall, Mushroom Gorge, Wario Gold Mine at the start to make it quicker to unlock Funky as well. And also a quick question, what would any% in any Mario Kart be, like would it be just getting to the final credits as fast as possible? (Not saying that it matters, it was just something on my mind)

Proably finish 150cc special or just reach credits any way.

Also yes, for Unlock Everything you can save a lot of time doing ultra shortcuts at the start but it would take a lot of resets.

Yeah but in some titles, there are the normal credits (appears when completed each CC) and final credits, which is shown when you usually complete the whole game. I guess it just depends on which Mario Kart you refer to.

Unless you're consistently fast at the ultra cuts/glitches to be used in time trials to unlock funky, it's not worth the chance.

As an example strat Rhode, once a credits roll begins, I reset the game in the Home Menu to save time. Come to think of it, my run is pretty bad compared to the other top 2 but still gives a relative idea of what the run looks like.

Yeah so I guess if you want to get funky as fast as possible with the ultra cuts involved, the two tracks that you should choose should be Mushroom Gorge and Coconut Mall. This is because if you perform them just right, each race can be well under a minute. As for non-ultra tracks, Yoshi Falls and Ghost Valley 2 would be the best two considering they are both the shortest two out of the sixteen you start out with.

Wii Us don't have reset buttons and I don't know if the reset button on the Wii works during that time.

Damn, so Wii saves time on the credits section with a faster reset. But Wii U is still overall faster due to loading times and also the fact that resetting by menu only takes a couple seconds longer at most.

@Rhodechill if you are referring to Grumble Volcano, i did not include that. This is because I am assuming that you start this run with only 16 tracks and Grumble Volcano is a track you have to unlock. So if you want to get Funky as fast and early as possible, then Mushroom Gorge, Coconut Mall, Yoshi Falls, and Ghost Valley 2 are the tracks I would start with (MG and CM with ultra shortcuts of course).
