Now if people want to decide to submit runs on say their “Xbox series x/s” Are they going to be an option?

It'll probably get updated, but to be fair playing on a newer console wont change much, as it would playing on an Xb 1/1s. Since it'll still be frame locked at 30fps.

I imagine load times would be better tho which would be the most important difference.
