Skip works only on the mobile version and it consists in the fact that you simultaneously press forward and backward at the beginning of any level, but you need to get into a rather difficult timing so that time stops running. This is how an example it should look like-

Probably the levels that can have the most time saved are 14 and 20 because they are on a hill, but it will take a while to records as the other strats required for them are very difficult

also level 7 there this skip saves 5 seconds :)
