I find that when firehopping downhill (i think Zero Gravity may have a hand in this to) i slow down, is this due to my kart/character set up? or simply me firehopping wrong?

Firehopping downhill will slow you down. You gotta demon slide/hop slide on downward sections. This video should give you more insight on Hop Sliding:
