What would I say my platform is if I play with a PS4 Controller on my Macbook? (Running Catalina so there is built-in support for PS4 controllers in the OS and Roblox.) Would it be macOS/PC or Xbox?

You would be on MacOS/PC since you're playing on your MacBook regardless of having a controller or not.
