In 1.16.2 they made pearl barters much rarer. They also give you fewer pearls. So run 1.16.1 unless you want to torture yourself

Sodium does change the UI, but imo Optifine changes it to be so much worse. For Sodium you can still easily understand everything while Optifine's menu is a complete mess

To see your in-game time it's recommended to use an in-game timer. If you're on Windows, then you should use Livesplit for the timer. Follow these directions: to use Kohru's in-game time extension.

For Mac or Linux, use either mine or tuxprint's in-game timer. They're listed on the Resources page.

To record, use OBS Studio (https://obsproject.com/)

If you really, really don't want to play in windowed mode with a timer, you can manually retime in an editing program later. From there you can subtract loading times from the real time to get IGT, although you could also just put the real time for both and have your run be ranked by a slightly longer time than what it actually took.
